All 3 flavors are GF, Non-GMO & full of probiotics:
White Miso- Compared with Red Miso, it has a shorter fermentation time of about 6 months, and is milder, or sweet, with a softer or lighter taste of Umami, and is made from Koji ( Rice,Koji Culture (Aspergillus Oryzae)) & Soy Beans
Red Miso- Same ingredients as the White Miso, but aged naturally for a long time in Portland’s climate, anywhere from 12~18 months. Therefore, due to the Maillard reaction, the color of this Miso changes gradually from white to red or darker red, thus giving it the name Red Miso. The flavors are more robust with greater Umami.
Chickpea Miso- For people with soy allergies you want to enjoy having Miso in their daily diet. Same ingredients as the other two but with chickpeas instead of soybeans.
Great as a salad dressing or finishing sauce for the veggies from your Produce Box, or solo as a soothing soup when paired with dried seaweed. We also love to add cold soba noodles for a lighter meal.. or a side of marinated fried tempeh!
